Quinoa Tacos

Hello everyone ,

Today I want to share with y’all my favorite recipe for quinoa tacos .

It’s a simple recipe that can be tweaked to your own Liking . This was a meal that really helped with my transition into becoming vegetarian.

id like to make a post on why and how i became vegetarian/vegan , ill be working on that soon.


Ingredients:

For quinoa :

1box of red bell roasted quinoa (I buy mine at aldi )

Olive oil

Handful of small tomatoes

3 bell peppers

A handful of spinach

Spices

Tacos :

Tortillas (flour)

Cilantro

Sour cream (optional)

Avocados

Vegan shredded cheese

Limes

Pico de Gallo

For the quinoa :

Boil water w/ olive oil & quinoa

Add in spices you’d like I choose oregano , taco seasoning mix , black pepper , chipotle .

Continue to boil gently for 16 mins (until water is absorbed )

Around 7 minutes I add in the tomato’s , bell peppers , and spinach .

Once done I remove from heat and cover for an extra 5 minutes .

The tortilla I usually like crunchy and flour , I only had corn this time around so I used those .
